Kid-friendly salad with squash:
Fall is the best season to find gorgeous, sweet squashes of almost any type and form! Pick one, dice it into bite-size, and steam it to make it soft and delicious.
Mix them with fresh spinach leaves, their favorite cheese, and pumpkin or sunflower seeds if you have them at hand. Kids generally freak out on complex or blended flavors, so why not serve it all separately on a plate?
Giving kids the opportunity to mix their own salad and customize the flavor can feel less terrifying, as it is a much more friendly approach to vegetables.
Apple + Dates Energy Balls
did you know that fall is apple season? Yes, from now to late November you will find the best, most nutritious apples of the year. Take advantage of the fresh produce and give it a twist with delicious dates to make a healthy snack for the kids!
How? Easy, first, soak the dates in a small bowl of hot water for 5 to 10 minutes, or until softened. Then, put the dates and the apples diced really small in the mix with oats, almond butter, pecans, and cinnamon. Process all together.
Once you have a fine mixture, rollover 12 balls and put them away in the fridge for at least 15 minutes. The result? A quick, friendly snack, easy to carry and offer to the kids when playing outside.
Healthy Candy Corn Parfait
Kids are all about color and shapes, and that’s a great opportunity to present new flavors! Inspired by the iconic Halloween candy, we propose a simple and healthy parfait with the same vibe.
First, dice up pineapple in bite sizes, and lay the chunks in the bottom of the cup. On top of it, you can lay orange pieces or tangerine slices with no seeds. Mix a cup of unsweetened yogurt with a little raw honey and vanilla extract in another bowl. This mixture will top the parfait and complete the total look.
