CHEESY VEGAN BEET PASTA MAC & CHEESE

INGREDIENTS
1 Cup Beet Pasta Noodles  (you want something with a curl in it to absorb and hold the sauce) 
1 Cup Cauliflower
4 Cloves of Garlic
1 Tbsp Nutritional Yeast
1 Tbsp Olive Oil
2 tsp Salt
2 tsp Pepper
1/2 Cup Coconut Milk

DIRECTIONS
1. Cook the pasta
2. Put cauliflower in pot with water & garlic and boil until soft
3. Transfer Cooked cauliflower & garlic to blender
4. Add Nutritional yeast, coconut milk, salt, pepper, olive oil, and blend
5. Make mixture smooth like paste form
6. Pour over pasta in a greased baking dish
7. Place in oven for 25 Mins - 350 Degrees until top is golden brown
8. Enjoy
